Can someone kindly advise what payment method is preferred in restaurants and bars ( cash or card),

They all have to take payment with cash by law. The majority also take card, but please pay cash whenever you can. When you pay by card businesses are charged by the card company.
There is also the fact the digital wallet and currency is coming, and that a very large number of people do not want it. Therefore, paying with cash helps as it shows cash is still wanted.
