If you only have a British passport then I'm sorry but it's going to be impossible for you. First, you would need to obtain a visa that will allow you to become a resident and will allow you to work. Unless you have €500k to invest in property you would need to get a working visa, which would be impossible for that type of work.
However, if you have a passport of an EU country, that's different. You just need to find a job and accommodation. Unfortunately, if you are hoping to rent accommodation, at the moment it is VERY difficult to find any that is available. But if you were to manage that, then there are some places advertising vacancies for staff.

For UK workers the law says I can work for 3 months without a visa but anything over that then I need a visa so all I need to do is come bk home for a week after 3 months then I can come bk and the 3 months will start all over again

I'm not sure where you saw that but it is incorrect and is certainly not Spanish law. If you do not have a visa you can not work
The allowed 90 days without a visa is for tourism only. You are not allowed to work. Any jobs that are available will definitely not hire you as you will not have the correct paperwork. The Canaries have been cracking down on illegal workers recently and it's simply not worth any employer risking the heavy fines involved.
Also, 3rd country nationals (includes the British since Brexit), are only allowed 90 days in 180, so no you cannot have 3 months in Spain, go home for a week and then come back. What you can do is visit Spain for 90 days, go back to UK for 90 days and then you will be allowed back in, but you still cannot work. Sure, some might get away with it at the moment before the Etias comes in at the borders, but if you are caught, you could receive a hefty fine and a ban from entering not just Spain but the EU, either for a specific length of time or for life.
